Meijer Dietitian Recipe: Simple Tomato Soup & Olive Oil Toast

INGREDIENTS

Tomato Soup

  • 2 Tbsp Meijer unsalted butter

  • 2 Tbsp Meijer extra-virgin olive oil

  • 1 (7 oz) Fresh from Meijer Diced White Onion

  • 4 peeled garlic cloves, finely chopped

  • ¼ Tsp crushed red pepper flakes

  • 2 (28 oz cans) San Marzano tomatoes, with juice

  • 2 Cups Meijer chicken broth (or vegetable broth)

  • 1 Cup fresh basil leaves (plus more for garnish)

  • 1 Tsp fresh thyme leaves

  • 1/3 Cup Meijer half-and-half (optional)

Olive Oil Toasts

  • 1/2 Package Frederik’s by Meijer Take & Bake French Classic Demi Baguette, sliced

  • Meijer extra-virgin olive oil, for brushing

  • Kosher salt and freshly ground black pepper

INSTRUCTIONS

1. Wash Hands

Wash hands with soap and water.

2. Preheat Oven and Sauté the Base

Preheat oven to 425°. In a large pot or Dutch oven, cook the butter, olive oil, onion, garlic, salt, pepper, and crushed red pepper over medium heat for 10 minutes, or until the onions are lightly golden brown.

3. Add Liquids and Simmer

Add tomatoes/juice, chicken broth (or vegetable broth), basil and thyme and turn heat to high. Bring soup to a boil, then reduce heat to low and simmer for 30 minutes.

4. Blend

Blend the soup with an immersion blender until smooth and creamy (or carefully ladle into a blender and process until smooth).

5. Add Cream (Optional) and Simmer

Stir in half-and-half (if using). Taste and adjust seasonings with salt and pepper, if needed. Turn heat low and continue to simmer.

6. Toast Bread

While the soup simmers, place the bread slices on a sheet pan and brush lightly on both sides with olive oil; season lightly with salt and pepper. Toast in the oven for 5 minutes; flip over and continue to toast for 3-5 minutes longer, or until golden brown and crisp

7. Serve and Enjoy!

Ladle soup into bowls and garnish with fresh basil, a drizzle of olive oil and crispy toasts.
